RUSSELLVILLE, Ark. (March 31, 2008)--Marinated pork loin will be the main course when Arkansas Tech students in the hospitality administration program continue their semester-long dinner series by serving a meal at the Williamson Hall Dining Room on Thursday, April 3.
Seating times are from 6-7 p.m. and by reservation only. Reservations may be made by calling (479) 968-0378.
The meal will begin with a black bean chorizo soup and a tropical fruit wrap salad. Then, diners will be served a pan-grilled, marinated pork loin enhanced by a red chili sauce and served with arroz queso and chile rellenos. Dessert will consist of a creamy caramel flan. Iced tea, hot tea and coffee will be available.
Price is $16.95 per person. All gratuities are reinvested in the Walters-Williams Scholarship. Students preparing and serving the meal are under the direction of Bruce Trefney, executive chef at the Lake Point Conference Center, and Ray Moll, instructor in the Arkansas Tech Hospitality Administration program.
