Hospitality Administration students to gain real-world experience

RUSSELLVILLE, Ark. (February 1, 2008)---The Arkansas Tech University Hospitality Administration program is set to begin a busy spring semester of preparing and serving meals in Williamson Dining Hall.

The first meal of the semester will be lunch on Wednesday, Feb. 6. It will be served from 11 a.m.-1 p.m. for $5.95 plus tax. On Thursday, Feb. 7, dinner will be served from 6-7 p.m. for $15.95 plus tax.

Dinner meal preparation will be under the instruction of Executive Chef Bruce Trefney of Lake Point Conference Center. Ray Moll, special events coordinator and instructor of hospitality administration, will teach dining room operations.

Tech’s hospitality administration program was the first such program in the state of Arkansas accredited by the International Council on Hotel, Restaurant and Institutional Education. Fewer than 40 programs in the United States have achieved the accreditation.

Moll said experience-based learning is important and that students in the program are involved in all aspects of the meal preparation.

“From inception, preparation, service and clean-up, hospitality students are fully involved in each meal,” said Moll.

Moll also said the experience is good for community members.

“Diners at lunch and dinner can expect well thought out and planned menus, a relaxing and comfortable atmosphere, reasonable prices, excellent food and warm, friendly and hospitable service,” said Moll.

The main lunch course on Feb. 6 is spicy chicken tortilla soup, and the main dinner course on Feb. 7 is chicken de Provence. For full dinner menus or to make reservations, call (479) 968-0607.
